Menu Plan Monday Jan 5/15

Back to work and back to school this week.  I used my time off of work to get a meal plan rolling for the next two weeks.  I don’t think I have ever been disciplined enough to do that.  I usually am more prone to “wing-it” but between wintery weather and work, I knew I would be kicking myself if I didn’t buckle down and do this!

Sunday – Guinness Shepherd’s Pie – a new recipe for me.  Usually I don’t have Sunday in my weekly menu plan but I wanted you to see this recipe!

Monday –Pea soup and grilled cheese

Tuesday – Chicken Fried Rice

Wednesday – Chili (made and stored in freezer – woo-hoo!) and crusty rolls with honey

Thursday – Quiche using a new recipe and fruit.  First time making quiche for me!

Friday Taco night!

    Now this is something that I have to make a concerted effort doing. Menu planning. I’ll bet following your example will be better than my current state of affairs. Standing with the refrigerator doors open and asking my husband (after 5 minutes of gazing) what he wants to eat. His response is always very helpful. “I don’t know. What do you want?” LOL 😀

      I find that if I don’t have a menu plan thoughts of what I could make just haunt my thoughts all week. Brain clutter. What I did this week was actually buy the food all at once (where possible) and this was new for me. Usually I’m kind of inefficient in that area. I am so grateful too because it is -5F here and then snow tomorrow. Ugh! A meal plan is actually a gift of peace to myself, every day.

      I like to look back at old meal plans for ideas, and I make sure to have a couple easy days (frozen pizza, soup & sandwich etc.). I don’t usually meal plan on the weekend 😃
