Menu Plan, Missing in Action?

Happy Tuesday!  I missed Menu Plan Monday yesterday as we had a cable & internet outage, but you can bet that I am working a menu plan, once again mainly based on items in the pantry and freezer.  We have:

  • Broccoli, Kale and Cheddar soup
  • Make Your Own French Bread Pizza and arugula salad
  • Shrimp and Twice Baked Potatoes
  • Spaghetti
  • Breakfast for dinner

I ran a Quicken report on grocery spending for the month of September and we averaged 85.00 a week.  This has been a pretty consistent amount for us since I started writing a menu plan based partially on what is available at home.  I like to check the numbers every month so I can be sure my impression of how much we are spending is correct.

I feel I am having “emergency preparedness” week this week.  Today at work we held our first lockdown and evacuation drill (to prepare for any type of gun/shooter incident).  One colleague commented during training, “This is just all way more than we need to know…”  but knowledge and planning is power, always.  Speaking of crises, we received my husband’s first check since the government shutdown and it was 50% less than usual.  Are you prepared for a sudden drop in income?  What baby steps could you be taking now to make things more secure in the event of a financial emergency?  Finally, I read the ‘Disaster Preparedness’ post by CrazyNoiia.  This is a season where some face hurricanes, and others have snow storms on the horizon.  Are you ready?

    My dad was a safety officer so I have that kind of “be prepared” mentality. Didn’t turn into a full-scale prepper, though! The broccoli, kale and cheddar soup sounds good!

    I think this is great and the point you made about being prepared is spot on!

    I always thought of myself as a planner but I realized recently that while I could foresee certain circumstances, I was still very reactive. I’m still feeling the effects of a 6-week medical leave back in April which has been compounded by the fact that I left that job in August and have been unemployed since then. I’m taking this moment to really get my financial and personal priorities together.

      Hi C Jayne.. Thanks for your comment. I hope new opportunities are coming your way soon! We are glad the federal shutdown is over… and people should receive back pay within a week or less.

    When I had my heart attack it was right before Christmas and I was unprepared for Christmas and I ended up off of work for 7 weeks. Seven weeks without my part time paycheck meant 7 weeks without grocery money. Thankfully I did have a stockpile of toiletries and paper products but not “heart healthy” food. We ended up taking awhile to catch up when I did start back to work. It does make you realize that we should be prepared for any circumstance that may arise. Lately I have been stockpiling anything from home canned food to toiletries bought with coupons. For some reason I have felt a need to do this. Crazy? Maybe, but I am not sure why I feel this way other than I just have a weird feeling that I cant explain. Maybe it will be a bad winter who knows.

      Do you have any favorite cookbooks or blogs for heart healthy cooking?
      I think there is some good wisdom in preparing a bit for winter. It’s already cold here in the midwest and going out for extra trips to the store seems less appealing. Wait till it snows, right? I should start working to restock my pantry a bit after all the meals we had from it during the federal shutdown.

        I have two of the American Heart Association cookbooks that I love. I can’t remember the website now, but back after my heart attack I found some recipes that I use all of the time now. I am also on Pinterest and I follow Mrs. Dash. Some of their recipes are heart healthy. It is funny because I used to work as a cashier and when the first snowfall arrived we would get really busy. People always wait until the snow falls then they panic to go and buy their milk and bread :).
